How to e-mail all contacts except one group

/civicrm/mailing/send seems to require a specific group to be mailed. I want to mail all my contacts with the exception of one group. I do see a way to exclude the latter group, but not a way to start out with all contacts. Any ideas? I'm on the latest stable versions of Drupal and CiviCRM.

create a smart group using the custom search include / exclude groups and then send the mailing to this smart group

Yup, this is doing it! at least for setting up the mailing. (Haven't tested yet.)
