a profile edit sends out 1 email everytime i save the profile on demo

There is definitely some setting that means that a Profile that triggers an email, combined with some aspect of triggering or updating the user/account causes two emails - we can overlook it for now.

Regarding the "side issue" of your original "Nick Name" profile not appearing in User Registration - this is a bug. Issue at:

http://issues.civicrm.org/jira/browse/CRM-3601
