Is it possible to edit the language that is automatically added to the invoices generated by CiviContribute? I am looking for the admin area for that and can't find it. They don't seem to be part of the Administer - Civi Mail - Message Templates.

Currently you will have to manually edit templates files.

Are there any plans to add editing functionality to the admin sections for these? It would be nice to be able to customizze the language of the invoices, messages etc in a WYSIWYG fashion. Plus add and remove custom ones.

This functionality is in development for the 3.1 release. You should be able to start trying it on our standbox in about 1 week. You can follow the status here:
