Change field and menu labels

Greetings:

As the subject indicates, I'd like to know how to change field labels for non-custom (canned) input fields as well as the default labels for the menu items. I'm looking to reduce support calls by implementing a labeling scheme that is consistent with the function of the organization. Thanks in advance.
