Ideas needed for allowing users to edit multi-value custom data

I am fairly new to CiviCRM and am in the process of setting it up for a community theatre to manage patron, actor, and volunteer data.  One of the things we would like to use it for is to allow our potential actors to store their audition profile so that they can come to auditions with an electronically generated audition application.

I have most of the bits in place for this, but the one that has me stumped is editing their "resume".  I have a fairly simple set of custom data that will store 5 pieces of information; date, production, role(s), theatre company, and director.  What I would like to have is a simple form that would allow them to edit and add to this information.  However, since it is multi-value custom data, there isn't a way to add this to the profile.

Does anyone have a straight forward example of how to do something like this with custom code?  I have seen the San Fransciso School example in the blogs, but what is being done there is so much more complicated than what I need that I am afraid it is going to take me longer to dig through the code and templates than it would to figure out how to do this myself! :-)  Is there any good documentation on taking advantage of custom code and the hooks in CiviCRM?

I am failry comfortable with PHP development, although a bit rusty.  I am currently running CiviCRM 3.0.2 under Joomla 1.5.
