I'd like to have event subcategories, rather just the basic event types. One way I tried doing this was by adding a custom data group that triggered based on the type selected, but when someone selects the event type, it appears above it which isn't very user friendly. Plus going this route probably doesn't make for the events to take on all the searchability a normal "type" would.

Any suggestions?

I would have thought that a custom group / field which extends each Event Type would have worked reasonably well. Perhaps you can clarify the problems with this approach by setting up a quick sample on the demo site and explaining how the behavior is different from what you need / expect.

OR you might want to look into creating a custom version of the template which is not displaying the field in the way/place you need it.
