I have produced a screenshot of the problem i have and query for easier understanding see:

However, my question is: in the create New Individual form - there is a current employer and Job Title fields. I have reproduced these elswhere is Custom Fields and want to delete ( or unpublish) them from the Contact Details tab - does anybody know how to achieve this?

You will have to remove "current employer" and "Job Title" from template file. I would recommend to use Custom Template feature in CiviCRM.
