I am using custom data, multi select, to indicate an event owner when creating the event, when viewing the event i dont need it to show up on the screen. is there a way to have to only when creating and edititing for the event but it shouldn't be displayed to the user. ( keep in mind, i have other custom data that is being shown to the user, hence i cant just take off the rights for them)

There's no way to selectively display custom Event data on the Event Info page without doing creating a custom version of the template that explicitly "skips" display of the custom field you want to hide. If you want to pursue this, check out the doc on customizing templates:
