Membership page doesn't seem to test out intuitively

I've used CiviCRM to create contribution pages, but this is my first shot at memberships. I've created membership types and a contribution page that includes them. I've also created a "Member Data" profile and included it in the page. Paying later by check is an option.

1. When I log out of the site and complete that page as an anonymous site visitor, choosing the option to pay later, all seems to go well on the front end. But after logging back in, that membership is nowhere to be found. Something I'm not understanding about this? Why did I fill in all my data if CiviCRM isn't going to store it?

2. The form is asking for email as a required field even though I didn't ask it to. In this group, not everyone will have email. Are they just out of luck for joining online?

3. How does this page handle renewals? Does the person need to be logged into the site for CiviCRM to "know" they are already a member and show the amounts? (Because I don't see those fields, myself, although the page was set up to accept renewals.)  This is not a site where members of the organization are likely to have/create Drupal logins unless they are on the board of directors.

1. A Pay Later membership must be completed by an administrator, by Find Contributions, locating the membership payment, and going through the steps to complete the payment.  Then the Membership should be created.

2. Yes, an email is required, and yes it appears they are out of luck.

3. The person must be logged in to pre-populate the form for renewing (aka. already existing) members.  If the person is not logged in, and pays for a membership, CiviCRM will attempt to locate a matching record via email address to determine if it is a renewal or a new membership.  If  zero matching emails can be found, a new Contact and membership will be created.  This would happen in the case of a person using a different email address this renewal, compared to the email they used last year, which is a frequent case.   If you are not going to provide online logins for your members, renewing online becomes increasingly difficult and cumbersome.

Thanks for all this. I was able to find the pay-later contribution and can see how staff would then complete the data to make it a membership. I was also able to get a good test of renewals using my own login - it showed all my data and told me when my membership expired - nice. (This group may rethink the whole login situation.)
