Installation of CiviCRM (Drupal) on new server

I had been playing around with CiviCRM on a local XP machine for a few weeks and was pleased with the functionality but not the performance (of the XP machine).
I have recently acquired a VPS from 1and1 and so far I have reimaged 14 times (massive difference between hosted and VPS)

I have Centos 5.5 installed and fully updated (using Plesk for the administrative front end as it does most of the other configuration stuff though it's a bit OTT for my purposes)
Centos only includes php up to 5.1.6 albeit without a few extensions.

What are the base php requirements for CiviCRM? i.e. mcrypt etc
