Sorry if this is an obvious questions, but I can't seem to find the answer. Can I automatically add event participants who register online to a particular contact group?

You could do this with a Smart Group. Do a participant search using the event as the criteria, select all participants and then choose New Smart Groups from the actions menu. From now on every contact registered for that event will automagically be added to the Smart Group.
