Greetings:

I have various profiles built for different needs. Some forms need multiple email and phone number entries for new "individual" creation. Is there documentation anywhere that tells me what I need to poke at to get civicrm to spit out things like adding these additional email and phone fields, and things like the calendar date picker, etc? Maybe the API? Thanks in advance.

You can add multiple phone numbers / email addresses to a profile type. The email addresses will need to belong to different location types, the phone numbers could belong to the same location type, but need to be a different phone type (phone/fax/mobile)

I suspect that is the easiest way to do it.
