How do I? Record event with many (anon) participants from one org

We host some events for schools assisted by business volunteers.

We need to record:

Registration for civiCRM contacts with various roles (as normal) including the school contact person or simply the school (organistion)
The number of students attending for a given contact person or school

How do we do that?

Currently this is not online registration, though it could be in the future - With online registration we can allow multiple registrations from one email, but this is laborious, limited to 10 registrations per user and still required emails.. which we don't -

We just need to record that for school x (or school contact y) is sending n students

At teh moment I am using the notes field, but I would like something that I can see in a query so that I can get an overview of all the events of a particular type and how many are going from which schools
