Understanding CiviMember

I seem to be having trouble figuring out how to event start with CiviMember.  I've

(1) Read the documentation at:
http://wiki.civicrm.org/confluence/display/CRMDOC/CiviMember+Admin

(2) Have the 120 record or so sample data installed

I find information about member types, but how do we setup a new member organization?  Under the CiviMember menu choice I see - Find Member and Import Members,  Under the administer I see Membership types and Memberships status rules.

Is there a writeup someplace about how CiviMember works, how to establish new Organizations - all I seem to have is Inner City Arts from the sample data. How do I get one of my organizations in the dropdown list?

Each Membership Type is associated w/ a specific Organization. Any contact of type "Organization" can potentially be a "membership organization".   In the sample data, all membership types "belong to" Inner City Arts. To have different options, create new membership type(s) from Administer CivicRM >> CiviMember >> Membership Types.
