I just spent 3 hours searching for the answer to this.  Nothing came up when I searched in the forums and the documentation, so now that I've found the solution, I will leave this message for the next time someone needs to search for the answer.

I needed to correct information in $pay_later_receipt (the address to send checks to has changed).  This variable is called by ReceiptMessage.tpl in order to generate an e-mail when a user chooses the "pay later" option when making an on-line gift.

I could not find where this information is stored.  It is not any of the Message Templates.  Nor in the contribution page configuration.  I searched and searched, like I said.  Finally I grasped that it is part of the pay later instructions, accessed when setting up a contribution (or event) page.  I looked there of course, but not in the "contribution amounts" section, which is where it is.  Ah, victory!
