Time Stamp for new Event Registrations

Whether through the Online Event Registration or through the back end, User, Events, Register for Event, the time stamp for the Event Registration is off by 2 hours.

I have seen other threads relating to Time Zone issues, but need some clarification.

Our time zone is CST/Chicago and our server is hosted in CA on a shared system.

Joomla is set to CST.

All Event Dates and Times are displayed correctly in the Back/Front End.

How do we fix this issue so that registration time stamps are recording correctly?
