A couple of oddities in CiviEvent that IMHO could benefit from being cleared up:

I'm unclear as to why when setting up a new event, that there is no option to set one of the global 'From' addresses as the email address for the email receipt.
I needed to edit this address on a client's site, and in order to do so I had to go through and edit it in every event, rather than in a single location.

Also, when registering an event participant in the back office (e.g. from a paper form) the email receipt appears to be sent from the email address of the logged in user rather than from the address specified for the event.

As from the from, some events are organized by people that aren't the ones doing the mailing, so makes sense to have a different one.

However, would be great to have the option to choose from the global list indeed.

As for registration from the back office, makes sense indeed. Would you like to make the change/contribute to it?
