What is the purpose of the "supervised by" relationship

It seems this may be related to CiviCase, but there's no clear indication in the forums nor the documentation nor the code.

I'm considering disabling the relationship, as we don't use it, but just wanted to be sure, to be sure.

Did a quick check, I don't think it's used for any infrastructure - you should be able to disable it without any bad consequences.
