Administrator Only - CiviMember Statuses

I might just be blind, but I can't figure out how to assign an "Administrator Only" membership status to a membership.  If I edit a membership the status is not editable.

By default, Membership Statuses are set and updated automatically. If you want to over-ride the status that would be assigned based on a status rule - then go to edit that membership and check the Status Hold flag. This will then allow you to edit / modify the assigned status AND it will prevent that status from being updated automatically if you run the UpdateMembership script via cron.

(I hope I understood what you meant by "Administrator Only" membership status.)
