Configuring available years in date fields

I'm trying to figure out how to set up date fields to allow entries for years prior to 2001, which is as far back as the calendar settings seems to allow me.

I went to Administer, Global Settings, Date Formats and even Advanced Date Settings.  Not seeing what to do there or in documentation online or hard copy.

Am I missing something obvious?
