Getting a little more logging / tracing on a production site?

It was brought to my attention yesterday that PHP itself is able to do logging. I have successfully enabled logging to a file and disabled logging to the web browser. Thank you Andrew for that suggestion!

So much of what CiviCRM is doing appears to go not logged / traced. Is there some way to make it even slightly more verbose / chatty in logging to the server itself WITHOUT having site visitors know we are working on tracking down "weirdness" in Civi?

Have you tried turning on watchdog for civi? Depending on what 'weirdness' you are tracking down, it may be helpful.

Administer->Configure->Global Settings->Debugging

Yes I have done that.

At the time, turns out that Lobo had specifically disabled logging for the sharp spot we were encountering.
