Correct me if I'm mistaken, that when emailing a contact, the drop down list of templates will only display the first five templates, so I have been informed. We're on 1.9

Thats not the whole picture. What is in the drop down menu (of 5) are the first 5 items that match what you have typed so far. If you haven't typed anything then it is the first five in the complete list, but if you have started typing, its the first first that match what you have already typed. So as you type the list should get closer to what you want till its the only one left. But you can select it once its part of the list of 5.
