Sending mail on local development servers without Internet

I’m often working on local development servers (Xampp,Wamp) without Internet connection.
I need a mail emulation system that can receive and deliver mails locally without sending mail out to the Internet.
Any suggestions??

Even when I'm on a local development servers I'm usually on the net, but I would think that if you defined your little world completely it should be able to do everything with out leaving the box. That would include having all domains(and sub-domains) defined in the HOSTS file and pointing to your box, running your own mail-server for sending and receiving, etc.

I use the development servers only on my old laptop during my tours to countryside in East Europe where no Internet at all. I’m looking for something smart and not resource demanding such SMTP an POP3 on the same machine that pinging mails to each other. Something easy in configuration and usage ...

Hi,
  it is possible to setup XAMPP to deliver mail to a local mail server via the mercury mail system

I'm sure I also read someone describing how to setup mail delivery to a file - this was for Drupal and I can't find the reference which had more detail than I can provide - but -

note the variable - smtp_library in the drupal_mail function

I think this can be set to include a simple function that just writes the mail to file
