So I added contact type committee under organization but i want to add another subytype under it. How do you do it?

Currently CiviCRM does not support multi-level subtype creation.

I would suggest to use tags (that can be hierarchical) instead of sub-type.

Well I went to the demo and saw the organization branchin out. When you click on contacts> New Organization> New Committee> New Steering committee ? how do add the new steering committee under Committee? I have been trying to figure out with no luck  ???

It isn't under committee. It might simply be under in the navigation menu, but isn't as stored in the database.
