So, just like the subject line infers - is there a way to assign contacts by group or tag to specific fundraising users/callers?

I was thinking perhaps of creating a tag for each caller then adding tag by search result to their assigned contacts... but I bet there is a much smarter way of doing this.

I am not quite sure about your use case but here is what you can do.

Profile has a feature "add to group", so if contact is added using that particular profile then those contacts will be added to selected group.

So I would suggest above settings and then include this profile on your donation / fundraising page. These way all the donors will be added to selected group in profile.
