Creating a customised export procedure

I'm fairly new to CiviCRM so apologies for not knowing the appropriate subforum into which to post this.

I'd like to create a function to export the details of some individuals to a CSV file, however I'd like to do some processing on the data before outputting it (is changing some formats etc), and I'm wondering what the best way to achieve this is? Writing a custom report template?
