How to set up a CiviEvent to take online and offline payments?

I would like to set up a paid-for event, but allow any of the following payment types: cash, cheque, "wire payment", credit card, paypal.

Looking at demo.civicrm.org, I can see how to set up the online, real-time payments, and that is fine, but I would like the online payments to be possible, and handled if filled in, but it should also be possible to leave the online section blank and tick one of the other payment options (cash, cheque, wire) to be processed offline.

Is this possible, and if so how?

As part of the upcoming 2.x release I believe there is an option "Pay Later" that may be able to help. I haven't experimented with it yet myself so I can't be sure if its a single option or if it can be combined with others (check, wire or cash). You can check it out by looking in the sandbox.civicrm.org

Thanks very much for pointing out this coming feature ("Enable pay later option" in Configure Event / Event Fees).  It sounds exactly like what I need now.  Unfortunately my project must go live by mid-March.

So this raises two questions:

1) Probability of CiviCRM 2.0 being released before the end of February?
    (And risk of using it immediately for registration for an environmental conference?)

2) Under the assumption that 2.0 would be too risky to use in a mission-critical app this soon, what work-arounds exist using the current version of CiviCRM/CiviEvent?  (I'm guessing others must have had to support on- and off-line payments before now.)

We are on track to hit our beta date (02/11, http://wiki.civicrm.org/confluence/display/CRM/CiviCRM+v2.0). If we do slip, it will be by a few days. We are fairly happy with the QA being done by the community and us :). That said, its a chicken and egg problem. We would encourage you to go live with it IF you are happy and have done enough QA on it to your liking.

As always, we will do our best to fix any bugs pretty quickly (especially mission critical). We'll probably avoid doing multiple releases a week, but you should be able to update stuff via svn

I suspect work-arounds / code-hacks around the v1.9 series are much less tested :)
