Trying to find a way to track all emails sent to a user.

I would like to have a way to see all the emails that have been sent to a user by or through Civi.
We have many membership reminder emails etc. that are automatically generated and would like to be able to see all of them or have a record of each.
Is this possible?

All emails that are sent are recorded as activities? So if you check for the activities of the contact you should see all emails sent.

Is there a setting somewhere to enable this?
Only emails that users enter are added as activities.
No automatic emails are added as activities.
