Often when we are using the dedupe & merge function, one of the contacts to be merged will be displayed with the field references showing, like {contact.first_name}. It will typically but not always show in the older (right-hand-side) contact. When I open the linked contacts, there is nothing visibly unusual about them, and the field list does not show up anywhere else. Is this normal behavior?

Those fields specify formats for email_greeting, postal_greeting, and addressee. They contain "tokens" which define the selected format. If you open communications preferences while editing or creating a contact, you'll see those when you set or update one of these "greeting" fields for a contact. So, yes - that is expected behavior.
