Where can I get statistics on the volume of emails we pass through CiviSMTP.

You can check out your CiviMail reports for mailings.

CiviSMTP usage is also reflected in your monthly bill if you send more than 3000 emails a month.

we can also provide details upon request for any month, just email us at civismtp at uas dot coop with your account name.
