Setting up reply-to or return-path

Not sure which one I should be doing, and how.

I have two accounts set up, bounces@example.com and replies@example.com.  My understanding is that bounces should be for processing actual bounce messages, and replies should be for doing email to activity processing.  I have cron set up so that both of these things seem to get processed correctly.

I am trying to get messages sent out by mailing lists to have a proper reply-to or return-path so that when someone responds to a mailing, it gets processed into an activity.  I see that there's an option for a processed reply to be forwarded to the list sender address too.

But when I send out a mailing list message, and then reply to it, the reply address is bounce@example.com, not replies@example.com.  Where do I change this?  In the mail accounts admin, I have each of those accounts properly set up as "Bounce Processing" and "Email-to-Activity".

Using 4.1.1.

For the mailings, I have checked the boxes for Track-Click-throughs, Track-Opens, Track Replies, Forward Replies, Auto-respond to Replies.
