As one of the options once I do a search for say- all donors over $500 and less than $10000, between jan 1 2013 and today- using "Find contributors"
I would like to be able to send an email to them-
however, if there are more than 30 or so- Civi balks and says- use Mailings.
Well- I'd need to identify these people in a group-
and from contribute- I can't.

Why can't I add this set to a group?

You can't add them directly to a group because as a main entity you are searching contributions, not contacts....even though you do see the contacts! You can perhaps try the same search in the 'Advanced Search' page, using the 'Contributions' tab. At least from there you can then add the contacts to a group and send them a mailing.
