Within communication preferences, there are options for "privacy" as well as for "preferred communication methods". The preferred methods are easily configurable - new options can be added, unnecessary options can de deactivated or deleted.

For privacy options, it would be nice to have the same feature!

Are there any other users, requesting this feature? How much might be the effort to implement that?

Not simple. Privacy preferences are not options in an option list but rather columns in the civicrm_contact table. Probably for legacy reasons. And I don't think anyone has yet felt it worth the trouble to refactor this.
One tip: you can use CiviCRM's "Word Replacements" feature to re-name privacy options to better suit your needs.

Privacy options also have special handling associated with them. For example 'do no email' means that people will get contribution receipts, event registration receipts & scheduled reminders (which has been somewhat debated) but not direct mails & civimails.

Do not trade actually means 'do not give my details to a third party organisation' - I did spend several years telling people it meant 'do not trade with this person / person non grata' but was much mistaken. Anyway - it will cause people not to be included in exports.
