When using CiviMail on Step 2 we have the "Track Replies?" checked. When the email goes out and a recipient replies, the "Reply To" address is our "Bounce Processing(Default)" address. Shouldn't the "Reply To" address be our "Email-to-Activity" address? If so how can I make this happen?

Please see attached pictures of our configuration.

It's normal, each sender email from civi has a unique "prefix" b.longstring@yourdomain vs. r.longstring@yourdomain based on that, the bounce processor knows how to handle.

Isn't your reply properly handled?

Thanks for the reply.... however, My question is why isn't Civi using the email address we have set for the Email-to-Activity address in the Reply-To? The verbage on the "Track Replies" says "Recipients' replies are sent to a CiviMail specific address instead of the sender's address so they can be stored within CiviCRM. The Email-to-Activity process will write the reply back into Civi.... the Bounce process doesn't do that, right?
