Creating a contact subtype: how?

I can add a contact type at

admin.php?page=CiviCRM&q=civicrm/admin/options/subtype&reset=1&action=browse

But I can't relate the type to a parent type like it says in the documentation I can.

I expect a drop-down containing the parent type.  But there's no drop-down (exept for the one that contains the basic contact types) at:

admin.php?page=CiviCRM&q=civicrm/admin/options/subtype&action=add&reset=1

Anybody have any ideas?

If you press 'Add Contact Type' you should get a drop down for 'Basic Contact Type'?

Yes, that is there.  But what I'm referring to is creating a relationship such as there was present out of the box between Teacher / Student.

The goal is to store organization records, then have individual records that are employees of those organizations.  Am I going about this the right way?
