Multi-day events with signup for individual days

I'm trying to set up an event that covers a multi-day (1 to 2 month) timeframe.  I want people to be able to signup for an individual day (and I need to track the total hours each person spent on the event)

I've been struggling to find how I might accomplish this - any thoughts welcomed.....

I would recommend checking CiviVolunteer extension: https://civicrm.org/extensions/civivolunteer
