Cannot edit (incorrect) organization address and contact info

I am familiar with wordpress but have just read the doc for CiviCRM.  We have installed a fresh wordpress + CiviCRM to use as a prototype.

When prompted to fill in the Organization Address and Contact Info, I accidentally put in a gmail address for the FROM Email Address under System-generated Mail Settings that we do not even own.   I used it for the Organization Contact Information also, at the bottom of the page. 

I want to correct those entries, but every time I edit, the changes are ignored silently.

I gave up temporarily and went on to Enable CiviCRM Components, or mostly to disable several and enable CiviCase.  Those changes are also ignored.

I AM an Administrator!  why do the edits not take?

may be unrelated but can you confirm you aren't jumping between www and no www?

Thanks for asking - what exactly do you mean? 

It is interesting that you ask about www because we thought it odd that the url came out with four parts, due to a prepended www.  My colleague wrote today:  "The only thing I did make sure of was to remove the www from the forced redirects and made some modifications to the wordpress install that were required. " 

So in fact when it was set up, the url was www.x.y.z and now it is just x.y.z.  Does that make a difference?

As far as I can tell, though, it is now consistently x.y.z.  Not jumping back to www.

That was it - it was trying to switch to www and the authentication was failing.
