Activity report + birth date range + custom dates

How can i generate activity report with other custom data? I wish to have an activity report with nationality (custom field), birth date (range) and gender . I also have a custom set of fields used for an activity type called 'project' which are  start date and expiry date, is it possible to list activities sortable by project expiry date?
Please, any help (hint) will be much appreciated.

as a work around, i have added the nationality and gender fields to the activity custom fields. still one problem though, how can i sort the report by expiry date?
