When I select a contact to view, then click 'Contributions' to view their contribution history, is it possible to change the columns of information? I would prefer to see a 'Soft Credit' column, and I don't need to see the 'Premium' column.

This type of customisation is beyond the capabilities of the user interface, and would require some developer skills and a decent knowledge of CiviCRM to implement it. Having said that it's probably not a massive task for someone with that knowledge and skillset. If you have a budget why not post your request in the Professional Service board of this forum (http://forum.civicrm.org/index.php/board,19.0.html) and see if you can find a developer to help you.
