As I understand it CiviMember applies membership statuses by working through the available statuses form the top of the list to the bottom, and applies the first one which matches the current data criteria.

If so, could I then create additional statuses that would help me to categorise members, and which still respect the start and end dates, but which would not be applied automatically by CiviMember (i.e. could only be applied by an administrator) by simply placing them at the bottom of the running order of statuses?

I would think so, but the best way to test it is to try it on either your own test site or one of the demo sites
