So here is an odd question. Most sites don't have users over 100 years of age but for some reason it is limiting the date of birth between 01/01/1914 and 12/31/2014.

I have a list of deceased people on my site that were born before 1914 and it will not let me save the date on their contact record. Is there any way around the 100 year limit?

Do you mean the form gets rejected if you submit it, or do you mean the date widget won't scroll back more than 100 years? If the latter, can't you just type the date manually?

Yupp - you can do it via Admin > Localisation > Date Formats > Advanced

eg here

http://drupal.demo.civicrm.org/civicrm/admin/setting/preferences/date?reset=1

and change the Start Offset ;-)
