Why two lines cannot be edited ?

Edit allow me to put in French the status. (Pending, deceased)

And where can I edit the Sart and End Event to put it in French ?

Those values are 'in code' and not user editable. They should be translated as part of the French translation package.

I started to use CiviCRM in French but this as some drawbacks, because there is no active CiviCRM forum in French. Working in French provide  some dificulties in finding  the right English word when I want to  express something in the English speaking forums.
And sorry to say, but the French translation is "to be improved" and it is sometimes "not understandable". My idea is to work in English and later on translate the MMI (the administrator can work in English).
When we will have our IS working, I will propose to provide an help to improve the French translation.
