How to use soft credits for third-party scenarios

In version 4.5.x I want to make sure I am using the new feature of soft credit types properly. In what scenarios would the soft credit type "3rd-party Service" be used?  Who would get the hard credit and who would get the soft credit?

FYI:  The situation I am attempting to document is as follows:

George Jetson is paying member dues.  Most of the time George directly mails a check to cover the dues payment. (In this case I see no need to use soft credit).  However, occasionally the check is mailed by grandma Jetson ( ie Mertle Jetson).  I am thinking Mertle Jetson should get  the hard credit (so we can send her a tax letter at the end of the year) , and George Jetson should get a soft credit of type "3rd-party payor" ( or some other new soft credit type)  Or would one of the built in soft credit types be a better choice?    ( FYI: In some cases dues are set up as a pledge, and the contributions are recorded as pledge payments)
