Inbound SMS/Email Activity Data

I've noticed that inbound SMS activities store the phone number (not the phone_id) of the phone number that they are received from. This is in the core civicrm_activity table.

But inbound Email addresses aren't stored in the table. In fact, there is no field for them.

I'm doing some custom FF development, and I was wondering what the reason(s) for this were, and if they should be stored?
