How to set up funding accounts- and maintain balances?

A non-profit wants to collect money for multiple "candidates"- in this case, Veterinarians offices - who will then have access to funds raised on their behalf- to use to help animals that have families who can't pay for needed care.
I understand how to set up pledging to different accounts-
but- then, I'm not sure how I keep track of the balances- esp. after applications for use of funds are made via Civicase, to track all expenses.
Ideally- I'd love to have the widget keep track of the amount that has been raised for each vets office- so that it can be right on their site as a donation widget.
And- some donations won't be specific to individual offices- they would go into the general fund.
All the campaigns I've had- we've never tracked expenditures via Civi- just income.
Suggestions?
