When I click on New Organization under the Shortcuts block it gives me too many fields. How do I associate the "New Organization" shortcut to create a new organization under my simpler organization profile?

Two possible approaches...

1. You can disable the standard CiviCRM shortcuts block and create your own block with appropriate links to the profile forms you want to use. (Check the online doc for Linking to Profiles if you need info on URL formats.)

2. You can create a custom version of the built-in New/Edit Organization form template. Check out these instructions:
