Using the 'Current Employer' field

The 'Current Employer' field does not seem to be available as profile field.

This would seem to be a common type of data to collect in a sign-up form...

Is there a way to do this that I'm not finding?

If you want to employer/employee relationship org to show up in a profile, that is currently not implemented (though it is an often asked feature so a code contribution would be terrific)

if you just want to record the employer name, u can potentially do it using a custom field

That's the goal, and I'm not surprised that it is a common request.

...so I doubt I'll be capable of implementing this feature, but if I do come up with a solution, workaround, or budget to hire someone else, I'll post it here.

This functionality is being added for 1.8:
http://issues.civicrm.org/jira/browse/CRM-1942

Note that it is ONLY for creating the employee/employer relationship from a Profile form - not a general solution for creating any kind of relationships in a profile.
