The organization has different types of, what I call, contacts. There will be advertisers, sponsors, members, student members,... Each requiring different data fields to be collected.

- How can I differentiate between them?

- Is that what profiles do?

- Can I have it dynamically display the appropriate fields based on the type of "member" they are when completing the form?

Not sure if you taking about contact creation or membership signup. If you talking about creating contacts - Yes profiles can do that. Different profiles will need to be created for each type (as long as input fields are different).

But don't think there is any way via UI that could direct the members to appropriate profile. So either you will need to do custom coding or simply display all the links to profile.
