Hi,

I want to try 2.1 with real datas, what is(are) the scripts to run ?

I saw several under /sql, but the newest seems to be civicrm_upgradedb_v1.8_v1.9_41.mysql . What's the proper way to go to 2.0 svn to trunk ?

As with 2.0 - the upgrade is driven by PHP code. I haven't tried this myself yet - so caveat emptor - but I think the process and path to invoke an upgrade is
mostly the same as for 2.0

If you have the 2.1 codebase and the 2.0 DB - it should "know what to do".

HOWEVER, I think there are some new issues / steps related to the fact that 2.0 runs under Drupal 5.x and 2.1 under Drupal 6.x. We'll be publishing draft procedures on how to deal w/ this soon. That said - if you're up for giving it a try - please do and report back on your steps / results.
