When I create a meeting, I am only able to select one attendee.
9 times out of 10 at my organization, there are multiple people attending any meeting.

Also under new activity it was the same way.

Maybe I am missing something, but I cannot seem to figure out how to add more than 1 person to a meeting

I think that you're talking about activities functionality, not CiviEvent, am I right? As of 2.0, CiviCRM allows storing only single contant in the activity. In 2.1, it will be possible to associate more than one contact with given activity.
